I love crockpot meatballs. I love cooking meatballs. I specialize in simple Italian meatball recipes and I think nothing of searching all over the web for Swedish meatball recipes.

Perfect Italian Meatballs
Let's just stick to some basic recipes - especially easy meatballs recipes. The idea here is to follow the basic meatball recipe making the basic building block on which to build a variety of meatball dishes. Mix and match, but the basics remain the same. Here we go:
2 pounds ground beef or lamb or chicken or turkey
1 heaping tablespoon chopped fresh parsley
1 heaping tablespoon chopped fresh basil
1/2 cup finely grated Parmesan
1 cup fresh bread crumbs
1/2 teaspoon black pepper
1 teaspoon salt
1/8 teaspoon ground cayenne pepper (take it easy with this stuff)
2 cloves garlic, minced
2 eggs
3 tablespoons of your best olive oil - don't skimp here!
1. In a big bowl, lovingly combine all ingredients except olive oil by hand, using your lightest touch. Separate a portion of meat in hand, and roll between palms to fashion a ball that is firmly packed without being compressed. Repeat the process, ensuring each meatball is approximately 2 inches in diameter.

2. In a large,
heavy pot heat olive oil over medium-high heat. When it shimmers, add
meatballs in batches. Avoid over crowding. Brown well before
turning as the meatballs will break apart. Continue cooking until each meatball is browned
all over. Remove meatballs to a plate as each batch is finished. Let
the meatballs cool slightly. Cover and refrigerate until needed.
Will make about 15 marvelous and perfect meatballs.
